Gas marks
Gas mark is the scale on British gas ovens. Each step stands for a fixed Fahrenheit temperature. The Celsius column below is converted; British recipes often round a little differently, for example 170 °C for gas mark 3 and 180 °C for gas mark 4.

What do the oven symbols mean?
The symbols look almost the same on most ovens. The lines show where the heat comes from, and a fan means the air is blown around.

Manufacturers draw the symbols a little differently, and some ovens have their own programmes. Check the manual if a symbol is not listed here.
How much lower for a fan oven?
A recipe temperature usually assumes a conventional oven with top and bottom heat. A fan oven moves the heat around and bakes faster at the same setting, so most people lower the temperature by about 20 degrees. British recipes often give both, for example 180 °C or 160 °C fan. Ovens differ, so follow the manufacturer’s guidance and keep an eye on the first bake.
Is your oven right?
The thermostat in a home oven can be off. If bakes often come out too dark or too pale, check with an oven thermometer and adjust to it.
